I can’t believe after all this time in the managerial space once it came time for me to start my own company I actually had to hire my son’s 19 year old college buddy to come over and teach me what he could about IT but you know, when you’re the boss you’ve got to know a little bit about everything. I think it’s crucial to be well informed about what’s going on in the smallest parts of your company and if you don’t then you’re just asking to lose money. It’s never a good idea to have someone working for you doing something you’re not educated to do yourself but you know, I can’t be everywhere all the time so…

Pool Cover

A swimming pool is such a delightful part of your home. The family can enjoy it at any time they choose. However, sometimes neighbor children come over to play unexpectedly and it is a great idea to have a Pool Cover over your pool. Bake a Little Cake

3, 2, 1 CAKE
These individual little cakes are amazing and ready to eat in one minute! They are perfect
for whenever you feel like a treat without all the fat and calories that cake can have. Genius idea!

INGREDIENTS:
1 box Angel Food Cake Mix
1 box Cake Mix - Any Flavor
2 Tbsp Water
Makes 1 serving.

DIRECTIONS:
In a ziploc bag, combine the two cake mixes together and mix well. For each individual cake serving, take out 3 Tablespoons of the cake mix combination and mix it with 2 Tablespoons of water in a small microwave-safe container. Microwave on high for 1 minute, and you have
your own instant individual little cake!

KEEP remaining cake mixture stored in the ziploc bag and use whenever you feel like a treat! You can top each cake with a dollop of fat free whipped topping and/or some fresh fruit.

Helpful Tips:
This recipe is called 3, 2, 1 Cake because all you need to remember is
"3 tablespoons mix, 2 tablespoons water, 1 minute in the microwave!"

TRY various flavors of cake mix like carrot, red velvet, pineapple, lemon, orange, etc. Just remember that one of the mixes has to be the angel food mix; the other is your choice.
The flavor possibilities are endless!

NOTES:
The best thing is, you open both cake mixes into a gallon storage bag, one that 'zip locks' or 'self-seals', or a container that seals tightly, shake the two cake mixes to blend and then make the recipe. Storage of mix is simple, put it on a shelf. No need to refrigerate, since the mix is dry. Always remember, that one of the cake mixes MUST be Angel Food. The other can be any flavor. The Angel Food is the cake mix that has the egg whites in it. So, if, anyone is allergic to egg whites, DO NOT serve this recipe.

I like to try and get something different for my brother's birthday every year. This year I checked out the Internet and found the perfect gift for his birthday. He loves to eat and lives alone so doesn't have many treats. So if you are looking for a gift for your brother as I am looking for one for my brother, I found the perfect place. I found chocolate dipped strawberries, cookie baskets, a three-layer chocolate cake and also a Wine Country Picnic Basket, any or all of which he would just love. Mexican Lasagna

I made a big 9 x 13 pan of Mexican Lasagna last night. It smelled so good while the meat mixture was cooking. I didn't have taco seasoning so used a tablespoon of some wonderful Mexican spices I have so it should be extra special. You use tortillas in the pan instead of the lasagna noodles. You cover the bottom of the pan with them and then a layer of the meat mixture. Next, you put a covering of shredded cheese. Next comes another layer of tortillas (only one thickness) and then the other half of the meat. I like to cover it and let it sit overnight and then bake it the next day. You would never guess that it is tortillas and not noodles in it when you go to eat it. Just before it is heated thru, you put another cup of shredded cheese on top and just let it melt and it is ready to eat. I can hardly wait.

The sun is shining brightly again this morning. The temperatures are climbing right along and it is going to be another beautiful snow free day. In fact, all week is going to be snow free. Well, I guess they said we might see a few flakes on Wednesday but so far even those have passed us by. It is almost freaky because we are usually buried in snow and cold. The golfers have even been out golfing this winter, something that is unheard of here in this area. We love it!!!

This is my most favorite Mexican food restaurant. My kids invited me to join them tonight and they bought supper. It was absolutely great as usual and brought home some delicious left overs. Went shopping in Wal-Mart inbetween going to my sister-in-laws retirement party. They had a very nice party for her, a beautiful cake and snacks. Gave her a lovely plaque she can hang on the wall. Got to see her office too.

I took my brother to Taco Johns today. They have a special on tacos for 69 cents each. He loves them and always eats at least 3. We also get churros that are a delicious desert. I had a taco burger today for a change. I like to change off. I brought home 2 combination burritos for supper tonight and they were very good. We like to go every Tuesday as long as the weather is good. We always have a good visit that way too over good food.

Having a home of my own has always been a dream of mine and I’m finally realizing it, if not a bit less dramatically than I thought. When I inherited this house I would have thought it wouldn’t take long for me to decide to sell it but something about this place stuck with me and I decided to keep it and work on it – restore it back to its previous glory. I am finally at a point now where I’m doing things like installing Massachusetts adt and putting in a doggie door but those first few months were more about making sure the electrical was up to code and that the bathtub wasn’t going to fall through the ceiling. I love being a homeowner, like I said, but I never imagined I’d have to learn how to be a contractor at the same time. That being said, it’s nice knowing exactly what’s inside of this house and that I made it what it is today – that’s something I feel like I can be proud of.

Sister's Visit

My sister came to visit today. Her birthday was the 15th so I took her out for a belated Birthday lunch. We went to the Pizza ranch. It was really crowded with people. I think some companies were having their Christmas party in there. They could hardly make pizzas fast enough for everyone. It is good to see a business doing so well in a small town. We had a great visit and a great lunch.

I took my brother Christmas shopping yesterday. It was a great deal of fun to be able to get him some things that he would not ordinarily be able to afford himself. We had a very good time and we are very close and always have been close. So we always have a good time together talking over old times and such. We had a great Mexican lunch too and I got to see my niece that I had not seen in awhile. It was a fun day.

I sure do miss my little Holly. She was the best little dog we ever had. It is too bad that dogs don't live longer. She was a Boston Terrier and she learned tricks so quick.

We really hated it when she got sick and we knew we would have to take her to the Vet and have her put to sleep. She was so much company and fun.

I got to watch a part of the lunar eclipse this morning. I could see it plainly out my west window. I saw about a good 1/3 of it and then when I came back, clouds had moved in and I missed the rest. My daughter said she got to see the moon under total eclipse. That is so neat. It won't happen again, they say, until 2014.

There is nothing better than a good hot cup of tea and one or two fresh cookies. I decided last night I was going to bake some cookies. I had purchased a box of ready to bake frozen chocolate chunk cookies from the two Girl Scouts next door. I had the box in the freezer and decided it was time to bake some. They are already to put on your cookie sheet and nothing could be easier. You can bake a dozen or two. It makes it easy to have just a few around. Or if you have company coming, bake a couple dozen. I think there are about 4 dozen in the box so I have lots more I can bake and enjoy.

Saturday was to be one of our little great grandson's second birthday. However, he got sick and they found he had strep throat. Of course, the party had to be called off. That was sad for him and everyone. He is getting better and hope his brother doesn't get it also. This is the season when it sees like everyone is getting colds and more.

Branson is all aglow with so many beautiful Christmas lights this time of the year. They also have all Christmas shows and we saw the Miracle of Christmas, an outstanding production. At sight-sound.com you can go in a see some exclusive videos and photos of the show. It will cause you to want to go there and see it. We were fortunate to be able to travel on a bus because of our local bank. They took us to all the best shows and best shopping malls. We also ate at great steakhouses with a variety of foods besides steak. One of the top shows is called SIX. It is six brothers that sing acapella but not only that they make all their instrumental sounds with their voices. You would swear there was a band behind them but it was the men making all the instrumental sounds. You have to see and hear it to believe it, especially the brother who did the drummer. Just amazing.

Family Thanksgiving

I joined the family of my daughter-in-law this year. It was so much fun. We laughed and laughed and visited with everyone. There were there grandmothers there including me and 4 of my many grandchildren. The women and a couple of the men joined in to paint a designed board that could be hung in your home. I have mine here in the office. We also played the most fun game that I have played in a very long time. There was much laughter and also thanksgiving for all the good things God has given us to enjoy.

I decided we have had our little fiber optic tree long enough. It is time for a new one. I just got a new one with 2000 lights on it. It is three feet tall. I like to put it on a little table. It turns all around all the time and changes about 4 different colors. It is easy to keep from year to year. Just put a cover over it and sit it in the spare room on a desk. It is ready to go so will plug it in after Thanksgiving.

Garage Door Opener

The neighbor lady is having trouble with her garage door. It will not always open and sometimes it will not close. I told her she should probably get a new battery put in it. They just built the garage not too long ago though and the garage door opener is fairly new. So that might not be the problem. However, just because a battery is new, doesn't mean it just might not be a good one and she may need another battery. Guess we will see. The landlord is going to check it for her.

Pizza Buffet

Tuesday night I went out to the Pizza Ranch. They have a buffet now 7 days a week both at noon and at night. I had not been there for about 3 weeks so it was about time. I ran into some old friends I had not seen for a long time. They said they hadn't been there either for awhile so it was really neat running into them. I made a pig of myself and tried a piece of 5 different pizzas plus dessert pizza with vanilla pudding. It was all delicious.

Neighbors are Moving

Our neighbors took a vacation to North Carolina a couple of weeks ago. It seems he is originally from there and she is from here. Her parents are not a bit happy about it as they found a great house in North Carolina and are planning to move there in 2 months. He has had a very serious back surgery and he feels the warmer weather 11 months out of the year instead of about 6 will do him a lot of good as far as pain is concerned. I wish them all the best in their move and hope they will be very happy there. I know the weather will sure be a lot better during the year than it is here in the midwest with about 6 months of cold and winter and lots of snow.

Trick or Treat

The kids next door are all dressed up in their Halloween costumes. The town is having a special Trick and Treat parade for all the kids who want to participate. The parents take their kids to a starting point and then they walk 2 blocks down one side of the street and 2 blocks up the other side of the street. They get treats at each store that is participating. They really bring home a lot of nice things. The nursing home is going to have an hour on Halloween night for the kids to come and get treats. I think it will be fun for the patients there to see all the little children all dressed up.

Thanksgiving

October is almost over and November is just around the corner. Another week and we will be changing our time back again. I wish they could just leave it alone. We haven't even got Halloween over with yet and the Trick and Treaters and they have Christmas decorations out in all the stores. The next big holiday is Thanksgiving and it almost gets lost in the shuffle. I think we all ought to slow down and enjoy each day as it comes.

Snow for Halloween?

It seems like only a few days ago I was hearing about all the snow that had fallen in Denver. It seems a bit early for that. I know it snows in the mountains earlier but now they are talking as much as 10" out east. It sounds like New York and all the eastern states are going to get blasted with snow. They call it a Noreaster storm. I have heard they can get quite bad. With wet heavy snow, many trees will probably come down along with the electric lines. It is way too early for this to happen before Halloween but we have had light snows in the Midwest at this time before. But nothing like 10" of snow.

After several years of trying to decide where we should go on our next vacation, we’ve finally narrowed it down to two places: the Eiffel Tower or France to rent out a private villa. You see, my husband and I never took an ‘official’ honeymoon. We were moving for my husband’s job when we first got married, and needed all the extra dollars and pennies we could find! So, we decided to start saving for our dream honeymoon that we could take later instead of putting ourselves in debt. I realize this is not how most of America lives, but we are so glad that we made that decision! Now we have finally saved enough money and feel good about going! Our house is safe and secure (I checked out adt security systems), and our bags are packed! Now the only thing we have to decide is where to go! Maybe both- it IS our honeymoon!

Cooking for One

I thought cooking for two was hard when our last child left home. However, now I am cooking for myself only and that is much harder. It is very hard to make any quantity of anything or you have to eat leftovers forever it seems. It is nice when others give you something to take home and it tastes so good for a change. This week, I had a great casserole and biscuits at my daughter's and she sent home a bowl of chili. It is so nice to have something new and different for lunch and I don't have to think about what I am going to fix.

Funeral Visitation

i lost another brother-in-law last week and we went down to the visitation. I would rather go to visitations than funerals as you can visit with the family more, or so it seems. The whole family is growing quite old so it seems funerals are becoming more and more frequent. He was 88 so he had a long life but the last 10 years were spent in a nursing home so that isn't much quality of life. He went in his sleep and I guess that would have to be the most peaceful way to go.

High School Graduate

I was a high school graduate in l951. Can you imagine that/ we had a 60th class reunion Saturday night in my home town. It was a lot of fun and there was a very good turnout. I was surprised at how much everyone aged in 10 years since the 50th class reunion. It really made a difference in most people. Many I didn't recognize at all. I hope to get down to more of the class luncheons they have inbetween the years. Time is going way too fast.

Beautiful Fall Weather

We are having the most beautiful Fall weather right now. Last week we had some terrific winds that blew down many trees in some places. But not it has settled down and the trees are turning all kinds of colors. I think they are turning fast and earlier and I hope that doesn't mean an early winter. I see on my calender that I wrote down that we had a bit of snow on Oct 9 and 12th last year. The farmers are out in full force with their combines, bringing in the crops as quickly as they can. It has been so dry, they have no problem getting out into the fields. It is 74 degrees today and supposed to be nice all week. We are going to enjoy every bit of it as it can change overnight around here. We have had some frost already but so far most of the flowers have made it through.

I don't know if you like rap music but I do. Our grandson composed the best song for his grandfather's funeral. Everyone just loves it. He has a real talent for this and I think he will go far one day in the music field. It comes so naturally for him so that makes it easy. Daughters

There is an old saying that a son is a son until he marries a wife, but a daughter is a daughter all of her life. I really believe that is very true. Now one of my daughter's is moving to our town this weekend. How great is that? It is so nice to have family close by now that I have lost my husband. He left a big hole in my life but the kids and grandkids and great grandkids are filling that hole. It is wonderful having a big family and having them all fairly close too.

Moving to Georgia wasn’t really in the plans but when I got offered a job just outside of Athens it was really tough to turn down. It was the perfect position at a great freight company and I knew I could build the experience I needed to move forward in my career in a couple of years. One of our grandsons and his wife and two boys now live on a beautiful acreage. They have apple and cherry trees and have added chickens and a rabbit to their livestock. I knew there had to be something seriously wrong when my husband started passing blood clots in his urine. I have known people who had kidney cancer and this was the first sign. My husband had to see a neurologist this week because of severe nerve pain in his neck and down his back. He is now taking some pills and wearing a soft collar. He had to have an x-ray of his neck and an MRI. We'll find out Wednesday what will happen next. We had the best sweet corn yet for supper tonight. Our son called and said as he traveled from Springfield, Mo. to Iowa, he saw corn fields so dried up from lack of rain that they looked like they do in the fall when they are ready to pick. I love the television programs CSI Miami, CSI, CSI New York. I have started watching many of the Law and Order programs too because now the re-runs have started. NCIS is a big favorite of mine along with NCIS Los Angeles. And you can't leave out Rookie Blue either. As you can see I love crime shows. Our family dog was a little Boston Terrier named Holly. We got her when she was a tiny pup. She was different in that she had an all white face and one blue and one brown eye. We went out for supper tonight. It was sprinkling a bit and we weren't sure if it was going to rain or not. However, it had already poured where we were going and had stopped. 90 Degrees

It went from cold to hot in 24 hours. We had a little thunder this morning and just a bit of rain and then the thermometer started climbing. It is now 90 and very humid. The air conditioning is running all the time just to keep it down to 74. Our neighbors had problems with their brand new air conditioner and I really feel sorry for them. We had a wonderful time out at our grandson's acreage. They invited us for BBQ and there was plenty of great food to eat. The little great grandkids have all kinds of room to run and play on their acreage and they were having so much fun together playing on the big swing set. They also played in the new water shower as it was nice and warm yesterday and with a warm wind. They made homemade ice cream later in the afternoon with great rhubarb crisp and chocolate brownies. Everything was soooo good. We passed an exotic animal farm on our way there and home again and saw 3 of the 2 hump backed camels. Seems so funny to see camels in Iowa.

Future Computer Operator

It looks to me like we may have another computer operator in the family. He is hard at work on his little computer. They start them young now. I heard our school is sending home laptops with all the kids now in certain grades. They know so much more about technology than we do. It is fun to watch them at play. They can get so serious about what they are doing :0) It looks like he will be repairing them before you know it.
