Quick Easy Supper

Making a roast for supper is one of the easiest meals I can make. I brown a nice roast and put it in the crockpot. Set it on low and a few hours later, add onion, carrots and potatoes. The house always smells as wonderful as the food tastes. You can't beat the gravy you make from it. It is easy cleanup too after supper because you don't have lots of pots and pans to clean. I am planning to make one for Sunday night. Thinking about it makes me hungry :0)

Mashed Potatoes

Is there anyone out there who doesn't like mashed potatoes? Especially mashed potatoes that have a wonderful gravy on them? Served along with some good meat and vegetables and a salad and fruit. What more could you ask for? That is what we are having for supper tonight. Yum!

Fish and Hashbrowns

For a quick economical supper, just take a package of frozen pollock. Thaw it out and cut it in 2 inch pieces. Beat up an egg, roll out some cracker crumbs and heat up a pan with just enough oil to brown the fish. Dip the fish in egg, roll in cracker crumbs and fry on both sides just till golden brown. It only takes minutes. In another pan, throw in some shredded frozen hashbrowns and turn them to golden brown. Put a lettuce salad on the table and serve the potatoes and fish. Make your own quick tartar sauce with a little Miracle Whip and sweet pickle relish stirred in and you are all set. Was it all down with cold milk and have some sliced peaches or pears for desert. You can also put a couple frozen biscuits in the oven while you are frying the potatoes and fish, put on the butter and jam and you there you are - supper - quickly.

Goulash for Supper

Made a pot of goulash for supper tonight. Boy was that good for a change. Made a batch of banana nut muffins and they disappeared pretty fast. Think there is one left. Will be good with breakfast. Our little dog, Holly, seems to have a hip that is bothering her. Sometimes she will jump in her favorite chair (which is all of them) and then again she just walks around holding her head down. Guess we will have to ask the Vet if there is something we can give her for pain. She is allergic to a lot of things so we have to be careful.

Crockpot Cooking

I am making a delicious roast in the crockpot today. I use onion salt, garlic salt and Greek seasoning on the meat and brown it on every side in a big frying pan in oil. Then I put it into the crockpot. This is about 9 am. Then at noon I turn it on high. I put onion and garlic salt in the water to taste before adding the browned roast. About 2:30 I will add some whole onions, carrots, and then about 4 add potatoes. At 5 pm it will be ready to eat. Make some gravy out of the juice in the crockpot and everything is delicious and easy. Little cleanup too.
