Rice Soup
I made some Rice Soup this week. It is an easy soup with stew meat, broth, potatoes, carrots and rice. My old German mother-in-law made it all her life and it is one of my husband's favorite soups. It is great to have it in the refrigerator to pull out for a quick tasty lunch or supper too. My husband really loves soup. He could eat some with every meal. This one is especially fast to make and I can have it for lunch in no time at all. Sure saves me a lot of work on some lunches for a few days after I make a batch.

Holiday Meals

What is a Holiday meal without a pie or two or three? Everyone loves a good pumpkin pie with a dollop of whip cream on top or cool whip or even ice cream. Another good one is apple. Everyone loves a good apple pie, especially if they are made with homemade tender crust. Cherry, Blueberry and Peach are some of my favorites. I make my own pie crust that is just melt in your mouth.
Two Crust Pie Crust
2 cups flour 1/2 cup oil 1/2 tsp baking powder 1/2 tsp salt 5 Tbsp cold milk
Mix altogether gently in medium mixing bowl by hand, divide in 2 and roll out between 2 sheets of waxed paper.
Bake all pies at 350 degrees until golden brown.
Divide recipe in half for a one crust pie like pumpkin.
Also dip fingers in a little milk and spread gently all over the top of a 2 crust pie, sprinkle with sugar before baking. Makes them golden brown.
